Pork Butts!!

Well, Monday and Tuesday were nice mid 60’s creeping into 70, and then Wednesday hit.  I left the house around 6am and the temperature in the car read 51, so of course, I do not have a coat on.  When I leave school the temperature says 38, wish I had a coat.  Anyway, spring is getting closer as the Cleveland Indians are playing their first spring training game today against the Reds.  Baseball is back, and summer is around the corner, thank goodness!  The best thing the Indians have done in recent years is the get-away games in the middle of the week at noon.  These games are right up my alley, they are usually over in 2-2:30, perfect home by 5-5:30 in time for dinner or a round of golf.  I plan on attending at least 3-4 of these games this summer.

Speaking of golf, I cannot wait to get out and play this summer.  I plan on taking a few lessons this year before the season, so if you have anybody that you like to recommend feel free to let me know, thanks in advance.  I am so excited that Tiger Woods is playing this week at the Honda Classic.  He played last week at the Genisis Open, so playing two weeks in a row means that he is healthy, doesn’t mean he will win like he did in the early 2000s but he is healthy.  As I said in an earlier edition of foodandfootballandeverythingelse.blog it is impossible for Tiger to be that dominant again, because of the number of great players that there is today.  The other day Rory McIlroy, one of my favorites, said he had never seen a crowd like the one that followed him and Tiger last Thursday and Friday.  The great players today do not have any recollection of the greatness that was Tiger Woods, his mystique was all part of his intimidation before they teed off.  I ordered a t-shirt from Barstool Sports that has the Tiger fist pump silhouette in green and yellow and says “Make Sundays Great Again!”  I can not wait for the scene at Augusta this year especially if Tiger is playing well and contending for tournaments.  Tiger Woods love him or hate him makes golf better, here is hoping for a great Masters Tournament. On a side note does anyone else have a better job than Jim Nance?  Back to back weekends, he calls the Final Four and the Masters, I would trade with him tomorrow!

On Wednesday night Erin and I were out and were hungry, or as she would say, “I’m getting Hangry!” We were trying to decide where to go and it was between Five Guys, always a good choice and quick to I might add, then she brought up Parker’s in Avon Lake, so that is where we ended up.  Parker’s has a great atmosphere and Wednesday night they had live music, nothing big but a guy with a guitar that could sing, it was nice.  Sometimes you go to those places with live music and it sucks, the music is too loud and you end up screaming at each other or not talking at all, but Wednesday was perfect.  We both got salads, I got the grilled chicken cobb salad and Erin got the steak salad.  My salad was great a generous portion of the usual bacon, eggs, feta cheese, tomatoes, and avocado, which I have grown fond of, and I got blue cheese dressing instead of ranch.  The lettuce was crisp, which makes a salad in my opinion soggy lettuce is the worst.  All of the ingredients were fresh and tasted fantastic.  I got water to drink was thinking maybe a beer but I changed my mind. Our waitress was amazing and was seemingly very good at her job.  She came over to the table to see if we needed anything just enough times not to get annoying, it was a lovely meal, I thoroughly enjoyed it.  On the Shamrock scale, I give Parker’s in Avon Lake. ☘️☘️☘️☘️ We will definitely be back!

On Wednesday, I get a text from Erin that reads, “Do not kill me, but I signed us up for something!”  I had to make 20lbs of pulled pork for a party on Saturday night.  This is one of my favorite things to do, no idea why she thought I’d be mad.  Thursday on the way home from school I swung by T.L. Keller’s Meats in Litchfield, Oh to pick up the pork butts.  If you are anywhere near Litchfield I highly recommend getting meat from Keller’s, it is a family-owned business where all the animals are grass fed, they cut out the middleman so the prices are a ton better than the grocery store, on the Shamrock scale, I give Keller’s.☘️☘️☘️☘️☘️ I digress, I got the pork butts ready Thursday night and put into the refrigerator overnight.  I injected each butt four times with a mixture of Three Little Pigs Championship rub and water, each injection went into a fat seam which will allow the injection to spread throughout the inside of the butt.  Then I rubbed each butt down with yellow mustard, bought from Aldi’s for $.69, and then sprinkled Three Little Pigs all over the butt as a base and then topped it with Three Little Pigs Sweet for it to form the great crust that is the signature of pulled pork. Here is a picture of the butts before I put them in the refrigerator:

 Friday night I put them on the smoker at 225*, after they had been in the refrigerator for about 24 hours.  I feel that the colder the meat is the better smoke flavor that the meat is able to absorb while smoking.  The butts only cooked for about 12 hours which was faster than I thought, but they turned out delicious.  The picture is only one since I forgot to take a pic of the second too, sorry.

I use a Green Mountain Daniel Boone Pellet Smoker, I love it and get the same amount of smoke flavor through the preparation of the meat as I would if I used a charcoal and wood smoker.  The preparation of the meat is key to achieving the quality product that you want.  Also, a great resource on social media is my man, @ChrisMarksBBQ, I have only physically meat him once, last year at a class he held at The Heat Exchange in North Ridgeville. Anytime I hit him up on Facebook or Twitter with a question he is quick to reply with a great answer it doesn’t matter whether it is a holiday or not.  I would also like to thank my other inspiration @HankBrock7, watching him cook and the pure joy and pride he took in it was one of the reasons that after I got married and moved into a neighborhood I really wanted to start smoking and BBQing.  Thank you guys for all of your help and inspiration.

Admittedly, I do not listen to the music that is on the radio my commute is filled with podcasts and books from the library.  Therefore, when Erin wanted to watch the Grammy’s tonight I wasn’t sure who would be nominated much less win, but I saw the commercial and Bruno Mars was performing so I watched.  Bruno Mars is a great entertainer and I would love to take Erin to his concert, she absolutely loves him, but other than that I have never heard of 75% of the artists James Corden is announcing.   I will say that “Despacito” is a very catchy song and probably my favorite so far of the Grammy’s.  It was also great to see legends such as The Edge, Bono, Sting, and Shaggy tonight performing.  I love seeing Tony Bennet get out there to present an award with John Legend. Bennet is 91 years old and won a Grammy 56 years ago and still seems sharp as a tack.  I obviously started this segment before the Grammy’s were over, but they may have just saved themselves with Elton John and Miley Cyrus singing “Tiny Dancer”.  By the way, Miley Cyrus looked tremendous in that gown, can’t remember ever saying that before usually, she looks like trash.

Tiger had a great showing at The Farmer’s Insurance Open at Torry Pines near San Diego, California.  I just saw where they suspended the Open playoff, with Noren and Day tied at -10 after 6 holes, and I’m assuming will finish tomorrow.   Tiger finished tied for 23rd after making the cut right on the number Friday.  I saw today where he finished 656th at the end of 2017 so for him to be able to finish in the top 25 in a legitimate PGA event is awesome, considering he did not have near his A game this week.  I am looking forward to seeing how he rebounds in two weeks at Riviera Country Club at the Genesis Open.  It is one thing to get up and make a cut at one tournament but can he do it at multiple tournaments in a row, if he can do that I will then get excited for Tiger’s return to Augusta.  This weekend Tiger finished 3 under par and shot even on his final round, not bad for a guy that at times looked like he had never played Torrey before today.  Although, it was great seeing the redshirt back out there on Sunday!

One thing that I do pride myself on is that I feel that I am very self-aware.  Erin has asked me before, “If we have a boy will I push him into football?” I told her honestly, no I hope he plays something that I know nothing about so I can stand at the top of the stands and enjoy watching him play.  I discovered that it doesn’t matter if I know the sport or not I enjoy arguing with referees, and before you say anything I am fully aware that it doesn’t help he or she is not going to change the call.  I can not help myself that striped shirt is like the red cape to a bull, it just fires me up from the get-go.  Thinking back to my time as a coach and even as a basketball referee I constantly yell at officials.  That’s right I when I was refereeing basketball I would in my head tell myself that was an awful call that I just made, I yelled at myself more than the coach did.  One highlight, or lowlight depending on the viewpoint, of my past, was when I was 21 years old coaching football at TCC.  We were down 2 points and our QB rolled out from our own end zone and no one was open so he threw the ball out of bounds happens all the time right? The head official called intentional grounding resulting in a safety and effectively ending the game.  I was in the booth and was so upset that I took my headset off and threw it against the wall, exploding it.  I then left the booth and hopped over the railing at the bottom of the stands and ran to the sideline where I expressed to the official my displeasure and he gave me a flag.  This prompted my Aunt who was listening to the game on the radio to call my mother and ask, “Which TCC coach got the flag at the end of the game?” To which my mother answered, “You’re dumbass nephew!”  She was 100% correct it is not a moment I am proud of, but it is one of many.  This weekend we had a wrestling tournament and admittedly I only coached wrestling because they needed someone to be an assistant.  I allowed this referee to get to me again and I spent the whole day mad at this referee because he was not good at his job of being a referee.  I tell you these stories to bring us back to my original point and admit that it will not matter what my son or daughter plays I will always yell at referees, always have always will.  I apologize for my actions in advance.

In the last foodandfootballandeverythingelse.blog I stated that I wanted to make Erin ribs for her prize for coming home to us from Dallas.  I was unable to get ahold of her before she went to the butcher and bought an 11lb pork shoulder, so I made that instead.  I hope next week to make the ribs, they sound like a good Super Bowl Sunday treat.  I put the pork shoulder on the smoker yesterday at 6:30pm and it was going to take 16.5 hours so it should be done around 11am the next day.  I prepared it as I usually do by spreading yellow mustard on it and sprinkling Three Little Pigs All Purpose followed by Three Little Pigs Kansas City Sweet, then injecting it with the Kansas City Sweet, and started the smoker at 250*.  I woke up at 5am and went outside and the pellets had all run out of the fire box, I refilled it and then I went back inside.  Two hours later I went back out and the firebox was empty again and the temperature had fallen and the pork was at 134*, so I took pork off of smoker and finished it in the oven.  It was finished around 3pm and was as good as ever, I figured it would be since the smoke had gotten in the meat and therefore the taste.  I think what happened was over the winter the drop in temperature and then the subsequent rise caused moisture to get in the pellet bag and mess them up, but we saved the pork.  I will be having that for lunch this week!

Food, Family, Football, and more Food!

Sorry for the late edition but I think you will understand after reading the following.

The week between Christmas and New Year’s is one that leads to a lot of confusion.  No one knows what day it is or what the actual date happens to be.  I find this to happen especially when Christmas falls on a weekday.  Christmas and Christmas Eve and New Year’s and New Year’s Eve always seem like they are a weekend, this leads to the majority of the confusion.  Plus there is college football on the television each and every day and night which does not help when trying to decipher the date and day of the week.

My youngest brother Michael, his wife Kai, and their baby Teddy were in town the last couple of days.  They live in Boston and it is always a joy when they come to town.  My parents have stayed with us the last two days, which is interesting.  MSNBC has been on my television more in the last two days than it will be for the rest of the year.  I do not like the news media because it is slanted one way or the other.  The media is what is leading to the divide in this country, but I digress.  Although it does seem that  NBC only has about six people working for them, since the same people are on in the morning, noon, and night.  Last night was fun my father, my brothers Pat and Mike, and myself all went to Platform Brewery and had a blast.  It was fun shooting the shit and busting each other’s guts.  I know it sounds like BS but my three brothers and my father are my best friends and I can count on them for anything.  God bless my mother and I do not know a whole lot but I am 100% sure that when my mother passes and gets to the gates of heaven St. Peter will not even ask her any questions and wave her into heaven.

Having family in town means a lot of cooking for this guy.  It started with cooking the prime rib for Christmas Day.  The temperature was 14* which made it hard to control the temperature, but I was able to get it under control and the prime rib turned out great.

For the 27th I made 15lbs of pork for a family party for Pat’s daughters birthdays.  I made 1/2 of the pork Memphis style and 1/2 of the pork Carolina style.  They turned out great, as I was told by everyone at the party.  The cooking of the porks was a little adventurous.  Since it was 10* overnight making sure that the smoker was keeping the temperature at 250* was a little hairy.  I put the pork on around 5pm on the 26th and stayed up with it all night making sure the temperature held.  I was up every 2 hours after I went to bed to make sure that they were cooking correctly.  The first one was done around 5am and the second one was done around 7am.  At that point, I was up and couldn’t go back to sleep, around 12:00 we went to lunch at Slyman’s in Beechwood, which was really good.  After lunch, we went to Pat and Catey’s house and I promptly took a 2-hour nap, I needed it!  We had a great dinner and great birthdays for all of the girls!

God bless my wife, as my brothers, dad, and I were at Platform brewery, which is tremendous, she ordered us a Peloton bike.  I cannot wait to get my hands on this piece of equipment.  My plan for the new year is to ride this thing 5 times a week, I am told that I can do classes all over the world.  My plan for the new year is to eat better and get a lot more exercise so that, as Deion Sanders says, “You look good, you feel good, you feel good, you play good!”

F&F&E was not good this week, we went 4-6-1.  Which puts us at 13-13-1 for the bowl season, but good news, we will make it up this weekend starting today!

Watching the bowl games as they are happening, this UK/NW game had one of the most bizarre first halves I’ve ever seen.  The RB from UK getting thrown out was trash!  That referee should go officiate flag football if he thought that he was contacting the referee, especially when the ref initiated it!  The targeting call was unbelievable!  I have been around football for at least thirty years between playing and coaching.  Two things I have no idea about anymore are the targeting rule in college football and the catch rule in the NFL.

One thing that I would like to see changed is the final two-minute report that comes from the NBA office.  After the Christmas Day game between the Warriors and the Cavaliers, they said that KD fouled LBJ four times on the last two drives.  Thanks, how does this information help us on Tuesday?  The Cavs still lost and now your referees look like idiots because they clearly missed those calls.  If you watched the game at all Jeff Van Gundy was going crazy because the NBA officiating was so bad.  That will be the last I talk about the NBA until the playoffs.  The NBA has the most non-competitive and meaningless regular season of any sport.  See you in June when the Cavs and the Warriors play for the title again!

Shoutout to my good friends and neighbors Neil Patel and Kristie Benson on their impending nuptials this Sunday.  I am looking forward to being in attendance on New Year’s Eve.  Here is to you two and many years of health and happiness!
